Scale basically has to do with the sizing of the plants that are involved in your design, and this is important as you need to have proper scaling throughout the design overall; for instance, you do not want to have every plant except for one be huge, and the last be incredibly small, as this will throw off the scale of the design. Rather, you should stick to a basic size, and if you do want different sized plantings, you need to remember to balance them out properly.
Finally, texture is in regards to the texture of the plants and other design elements that you choose for your garden; you do not have to stick to only a single type of texture or boring textures, but again you need to remember the issue of balance. Also, try to choose textures that coordinate well with the specific parts of the garden design, so that in the end everything will work and flow together well.
